Hello, well it’s been a hot minute (6 years!) since I posted on here. I’ve been pretty busy, I finished college, won an education award and did a degree in Psychology. Phew! So it’s safe to say I haven’t had much time to create and make. I have been off and on making/creating but after a bit of a life reset recently I decided to start using this space again.
My return is this lovley little recipe I created (based off of a load of other recipes) and what I had in my kitchen.
Serves 1-2 people. (vegan)
Ingredients
1 can of butter beans including the water
1 large teaspoon of brown miso paste (add more for desired flavour)
1 leek chopped
3 finely chopped cloves of garlic
A handful of spinach
1 teaspoon of oil (olive,sunflower,veg)
A small chopped bunch of dill (optional)
Lemon juice
I also added some leftover cooked lentil pasta and chickpeas from last nights dinner, you could add any little extras like this you have hanging about in the fridge.
Method
Add the oil, garlic and leeks to pan, sweat gently for 5 minutes.
Now add the whole tin of butter beans including the water from the tin, simmer for 2 minutes and now add your miso paste. Taste it and if you want it a bit more salty (I do!) add to taste.
Let it bubble away for a minute and add the herbs and spinach. You can add any bits of leftover cooked rice/pasta/beans/veg.
Finish with a squeeze of lemon juice before serving.
(If you like you can grate some parmesan or plant based alternative over before serving)
